The eerie sounds of folk music fill the night air as the stars start to shine above. The splendour of rural Rajasthan comes to life in the middle of farmland on this evening of regal proportions. The magnificent preparation of “Khad Paneer,” a centuries-old dish that was handed down through the royal kitchens of Mewar, was what really ignited the Rajputana experience. Located in a pit buried in the ground, this personalized dish, appropriate for kings, was slow-cooked to perfection in a clay pot. The pit was shut while the succulent paneer cooked in a flavourful broth that was infused with aromatic spices, allowing the flavours to develop like a great wine. With the paneer so supple and the flavours so deep that they lingered on the mouth like a comforting whisper, the end product was a culinary masterpiece. It was an absolutely royal dining experience in the middle of “khet”!
