It’s Christmas time, and we can’t wait to get cheerful and merry. We look forward to decorating the Christmas tree, preparing holiday special treats and spending some quality time with our family and friends. To combat the temptation during winter time, we love to indulge in warm treats and try out different recipes, but, deep down, all we want for Christmas is sweets and candies! Well, this jolly day is known for its traditional sweet dishes and we gorge on these scrumptious treats and our indulgence knows no bounds.
And a sweet tooth mustn’t resist their temptation, especially during festive season. But, this festive season, let’s instead devour some sweet treats that are not only tasty but also nutritious which are made with oats. Most of us are aware that Oats have fiber, protein, and iron, and provides long lasting energy, but additional to these health benefits it’s one of the most versatile ingredients and blends easily into any recipe. If you go for a brand like Saffola Oats, which is made from soft wholegrain oats, it will blend so well with any of your Christmas patisserie recipes that you won’t find any difference in taste.

Oats and Honey Pancakes
(Preparation Time – 8mins | Cook Time – 10mins| Serves – 2)
Ingredients
• Saffola oats – 1½ cups (Prepare a flour)
• Milk – 1½ cups
• Curd and little oil for vegetarian
• Salt – a pinch
• Vanilla extract – 1 tsp
• Jaggery – 3 tsp
• Apple Chopped – 1 unit
• Cinnamon powder – ½ tsp
• Nutmeg – 1 pinch
• Baking powder – 1 tbsp
• Unsalted butter – 1tsp
• Honey – as accompaniment
Method
1.Add oats into the grinder jar and grind to a fine powder.
2.Now add all the ingredients except butter and honey and make into a batter which is thick but pouring consistency.
3.Adjust the consistency a little with milk if required. Heat a non-stick pan and pour a little batter into the centre. Allow it to cook for 2 mins.
4.Drizzle melted butter and flip the pancake to cook on the other side.. Once done remove and serve with little honey.
Chocolate Chip Oats Cookies
(Preparation Time – 20 mins | Cook Time – 12 mins| Serves – 3)
Ingredients
• 1 1/2 cups Whole Wheat flour
• 150 gms Saffola Oats (Prepare a flour)
• 1/4 cup Flaxseed, finely ground
• 1 teaspoon Baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon ground Cinnamon
• ½ cup coconut sugar
• ½ cup packed dark brown sugar
• Softened butter – 2 tsp
• 2 large eggs
• 1 teaspoon Vanilla extract
• 1 cup Chocolate Chips
Method
1) Preheat the oven to 200 C. Line 2 baking sheets with parchment paper
2) Whisk the flour, oats, flaxseed, Baking Soda, salt and Cinnamon in a bowl
3) Beat the butter, coconut sugar and dark brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Beat in the eggs one at a time, beating well after each addition. Beat in the vanilla. Reduce the mixer speed to low; add the flour mixture and beat until just combined, scraping down the bowl as needed. Stir in the chocolate chips
4) Drop heaping tablespoonful’s of dough onto the prepared baking sheets, about 2 inches apart. Bake until golden brown, 10 to 12 minutes. Let the cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely
Oatmeal Plum Cake
(Preparation Time – 20 mins | Cook Time – 45-50 mins| Serves – 2)
Ingredients
• Saffola Oats – 2 cups (Prepare a flour)
• Candied orange – 1 cup
• Melted Butter – 4 tsp
• Mix spice powder – 2 tsp
• Rum – 150ml
• Raisin, Almonds and Cashew Nuts – 2 cups
• Black current – 1 cup
• Brown/Coconut sugar – ½ cup
• Eggs – 5 no
• Cocoa powder – half cup
Method
1)Soak all dry fruits in rum with mixed spice powder overnight.
2)Cream butter and sugar together gradually adding eggs into it forming a uniform batter.
3)Add cocoa powder flour and soaked fruits. Pour the batter in lined Moulds and bake in preheated oven at 170c for 45-50 min.
4)Remove allow to cool and then demould.
Blueberry Oats Muffins
(Preparation Time – 20 mins | Cook Time – 25 mins| Serves – 3)
Ingredients
• 1 Cup Milk
• 1 and a half Cup Saffola Oats (Rolled Oats)
• 1 cup wheat flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon cinnamon powder
• 1/2 teaspoon salt
• 1/2 cup unsalted butter, melted and slightly cooled
• Curd and Oil
• 1 teaspoon pure vanilla extract
• 1 cup fresh blueberries (finely chopped)
Method
1) Combine Oats and milk and soak the mixture for 20mins. This will ensure Oats soak up most of the milk to prepare a thick and creamy batter for muffins
2) Mix all ingredients i.e., wheat flour, baking soda, cinnamon powder, salt to taste and unsalted butter, egg, vanilla extract and blueberries in 1 bowl. Then in the end add the soaked oats & milk to make the batter ready
3) Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners.
4) Spoon the batter into liners, filling them all the way to the top.
5) bake for 5 minutes at 425 then, keeping the muffins in the oven
6) Once 5mins are over, reduce the oven temperature to 350°F (177°C). Bake more for 15-17 minutes or you can try with a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. (For mini muffins, bake 11-13 minutes at 350°F (177°C)
7) Once ready enjoy with some hot chocolate
