There is a good chance you have eaten a kebab at one time or another. Before dosa bandis ruled the streets of Hyderabad, we had kebab bandis filled with delicious kebabs that catered to every palate. With the bandis long gone, we luckily have a few food joints. Hence, as we mark World Kebab Day today, we’ve compiled a list of the best kebabs by chef Harpal Singh Sokhi, and Varun Inamdar. So, stop yourself from licking your fingers and eat away!
Pakwan
1 cup wheat flour
1/2 cup maida
2 tbsp ghee
1/2 tsp Salt
1/2 cup warm water
1 tsp cumin seeds
Oil for deep frying
Assembly
Coriander curd
Tamarind curd
Chillies, diced
Tomato, diced
Coriander leaves
Masala Chana dal
Radish juliennes
Onion slices
Godrej Yummiez Chicken Seekh Kebab
Oil for pan frying
Method:
1. In a bowl, Mix together all ingredients for the pakwan.
2. Rest the dough for 5 minutes under a damp cloth.
3. Pinch lemon sized balls and roll into thick chapatis. Dock with a fork.
4. Deep fry on low flame till crisp.
5. For the assembly, pan fry the Godrej Yummiez Chicken Seekh kebab till crisp on the outside and golden brown.
6. Build the whole dish up with raddish julliennes, corriander curd, tamarind curd, chillies, tomato dices, onions, corriander sprigs and finally masala chana dal.
7. Serve Warm.
Chicken Galouti Kabab Tacos
Ingredients:
Godrej Yummiez Chicken Galouti Kabab 6 pieces
Taco Shells 2 pieces
Lettuce Leaves 3 large
Indian Salsa 2 Tbsp
Tomato chutney 2 Tbsp
Onions slices from 1 onion
Tandoori Mayo 2Tbsp
Oil for cooking
Method
1. Remove 6 pieces of Godrej Yummiez Chicken Galouti Kababs and Grill in a non stick pan.
2. To assemble, fill the readymade crunchy taco shells with Lettuce leaves and onion slices.
3. Add Grilled Awadhi Chicken Galouti Kababs
4. Top with Indian Salsa, Tomato Chutney.
5. Dress with Tandoori Mayo and serve hot.
Chicken Hariyali Tikka Pitta Pockets
Ingredients
Godrej Yummiez Chicken Hariyali Kabab 9 pieces
Pitta Bread 3 nos
Mint Chutney 3 Tbsp
Garlic Hummus 3 Tbsp
Lettuce torn 3 leaves
Indian Kachumber Salad 1.2 cup
Hot Garlic Mayo 2 Tbsp
Oil for Cooking
Method
1. In pan pour oil and heat the Godrej Yummiez Hariyali Kabab
2. Slit Open the pitabread to create pockets.
3. Spread Garlic Hummus and Mint Chutney Inside the pita pockets.
4. Add lettuce and onions
5. Stuff the pockets with chicken hariyali tikka
6. In a non-stick pan, now heat the filled pita pockets for some time.
7. Top the pita pockets with indian Kachumber Salad and drizzle hot garlic mayo
Lucknow Seekh Hot Dogs
Ingredients
Godrej Yummiez Chicken Lucknowi Seekh Kabab 4 nos
Hot Dog Buns 2 nos
Green Chutney 3 Tbsp
Fresh Cream ½ cup
Chutney Mayo 1 Tbsp
Mayonnaise 1 Tbsp
Lettuce 3 lleaves
Onions Slices from 1 onion
Mustard Mayo 2 Tbsp
Peri Peri Mayo 2 Tbsp
Oil for Cooking
Method
1. In a nonstick pan, pour oil and heat.
2. Add frozen Godrej Yummiez chicken lucknow seekh kabab and brown on all sides.
3. Add fresh cream, green chutney, mint mayo and regular mayonnaise and mix well.
4. Cook until the seekh kababs and well coated with chutney.
5. Now slit open the hot dog buns, arrange lettuce and onions slices.
6. Add the coated chicken seekh kababs and drizzle the peri peri mayo, mustard mayo.
7. Serve hot.
